Berries are one of my favourite fruits and can be used in so many ways.
One thing I love is that you can buy them either fresh or frozen making them a versatile and delicious fruit. And to top it off, they are a good source of Vitamin C

Two of my very favorite vegetables are asparagus and mushrooms. I really enjoy their flavors and when combined, they are just sensational.
I came across this recipe earlier today and thought I’d share. I haven’t tried yet but it sounds like a yummy salad.
It uses a variety of mushrooms including oyster, shitake and portabellini along with baby greens and a blend of dijon mustard, balsamic vinegar, olive oil and garlic…YUM!

I love a good salad and am always on the look out for anything that is bright, colourful and tasty.
Corn, for me, is probably one of my favourite vegetables. I can remember growing up that my grandparents always had a crop growing on their property. My nan and I would go down to inspect them regularly and she would snap off a baby corn and we would quickly eat it. The reason for this rather hasty approach to eating was due to the fact that my Pa was getting annoyed that none of his beloved corn was actually staying on the plant long enough to mature!
This recipe is sure to add a bit of color and variety to your dinner table, not to mention it is quite simple to prepare so give it a shot.

Our recipe for today uses one of my favourite ingredients, eggplant.
Eggplant or Aubergines are a good source of fibre and folic acid.
Though commonly thought of as a vegetable, eggplant is actually a fruit . . . Specifically a berry.
They are versatile and can be cooked in a variety of ways. This recipe is a light alternative to your common burger, not to mention it’s healthy.
